Based on the feedback I receive (from people all over the world), a common reason that many people are on the fence about eating Paleo, is because they aren’t confident in their cooking skills. Today I wanted to share my personal story with you, so that you can see how EASY it is to cook delicious and healthy foods for yourself, no matter your level of culinary experience.
I can’t remember a time when I wasn’t interested in food and the mysteries of cooking. Since neither of my parents shared my passion for all things culinary, I learned early on to find my way around our kitchen. I got pretty good at preparing tasty meals and I ended up cooking for the family a lot! When I wasn’t sharpening my cookery and feasting on my creations, I spent afternoons at the park - jogging, biking and enjoying the outdoors which set the stage for a lifelong love of fitness. As an adult, I became fascinated with the potential for nutrition on body composition, physiology and performance and I turned my interests in food and fitness into a career.
I spent many years working in clinical and community settings as a traditional dietitian before discovering and adopting an ancestrally based lifestyle. In my conventional practices, it became clear that the standard high-carb, low-fat diet wasn’t helping anyone. My clients weren’t achieving their goals and my own health was in a steep decline. At the same time, I saw my mother’s health improve on a low carb regimen.
On a diet of no grains and more meat and fat than I had ever seen her eat (I was horrified to see her pouring heavy cream on her berries every night!) she lost weight and her blood lipids showed drastic improvement. I was shocked! I started researching alternative nutrition and I was curious about a new way of exercising that seemed to make those who did it look really good. Ready for a fresh start, I walked into my local CrossFit, went Paleo and changed my life!
I started CrossFitting several times a week, gave up grains, most dairy, legumes, highly processed oils, processed food and sugar and incredible things happened.
My digestion improved, I gained muscle, lost fat, and resolved a host of inflammatory health issues, some so quickly that I was stunned. My friends could see a difference in me right away. They told me I looked “brighter” which was exactly how I felt. That uninvited heavy brain fog, long settled in, was lifting and letting in the light.
In just a few months, my Paleo-CrossFit journey had taken me to a place I had been trying in vain to get to for 20 years with traditional methods. It turns out all I had to do was EAT REAL FOOD and workout at a level a bit beyond my comfort zone a few times a week. I now share this newly found knowledge gained through experience with anyone willing to listen.
